Description

If you’re looking for a dessert that’s as merry and bright as the holiday season itself, this Strawberry Christmas Poke Cake is the perfect treat to bring to your festive table. It’s a delightful twist on a classic poke cake, with soft, fluffy layers of white and green marbled cake soaked with sweet strawberry Jello, then topped with a cloud of Cool Whip and a sprinkle of Christmas magic.


Ingredients

  • 3 white cake box mixes + ingredients on box
  • 1 packet (3 ounce box) of Strawberry Jello Mix
  • ½ cup boiling water
  • ½ cup cold water
  • Green food dye

Topping

  • Cool Whip
  • Christmas Sprinkles


Instructions

  1. Preheat your oven according to the instructions on the cake mix boxes.
  2. Line a 9×13 baking sheet with parchment paper.
  3. In a mixing bowl, prepare 2 boxes of white cake mix and pour it into the prepared baking pan.
  4. In another mixing bowl, prepare one box of white cake mix and add green food dye to achieve the desired shade.
  5. Pour the green cake batter on top of the white cake, drizzling throughout then using a  butter knife to drag the green through the white, creating designs.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  8. Once cool, use a toothpick or skewer to poke holes all over the surface of the cake.
  9. In a mixing bowl, combine the strawberry Jello mix with ½ cup of boiling water and stir until dissolved.
  10. Add ½ cup of cold water and stir to combine.
  11. Carefully pour the Jello mixture over the white parts of the poked cake, allowing it to seep into the holes.
  12. Cover the cake and refrigerate for at least 20 minutes to set the Jello.
  13. Spread a layer of Cool Whip over the top of the chilled cake.
  14. Decorate with Christmas sprinkles.
  15. Cut into squares and serve chilled. Enjoy!
