Ingredients
Scale
- ¾ cup apple cider/juice
- 3 ½ cups all purpose flour
- ⅔ cup dark brown sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- ½ teaspoon nutmeg
- 1 ½ teaspoons cinnamon
- 6 teaspoons melted butter
- ¼ cup applesauce
- ¼ cup sour cream
- 1 egg
Apple Pie Filling
- 20 ounce can apple pie filling, rinsed and diced
- 1 teaspoons cinnamon
- ½ teaspoon nutmeg
- ¼ cup brown sugar
- 2 tablespoons water
- 1 teaspoon lemon juice
Topping
- 1 cup white granulated sugar
- 1 tablespoon cinnamon
Instructions
- In a large mixing bowl, whisk together the all-purpose flour, dark brown sugar, baking powder, baking soda, salt, nutmeg, and cinnamon.
- In a separate bowl, mix the melted butter, applesauce, sour cream, and egg until well combined.
- Gradually add the apple cider/juice to the wet ingredients and stir to combine.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms. Do not overmix.
- Cover the dough with plastic wrap and chill in the refrigerator for about 20 minutes.
- While the dough chills, prepare the apple pie filling: In a bowl, combine the apple pie filling with cinnamon, nutmeg, brown sugar, water, and lemon juice, cooking over medium low heat until everything thickens together. Set aside.
- Once the dough has chilled, roll it out on a lightly floured surface to about ½-inch thickness.
- Use a round cutter to cut out doughnut shapes, making sure to cut two circles for each doughnut.
- Place half of the cut-out doughnuts on a parchment-lined baking sheet.
- Spoon a small amount of the apple pie filling onto the center of each dough circle on the baking sheet.
- Top each filled dough circle with another cut-out dough circle, pressing the edges to seal. (Easiest done by using the cutter again to seal the two dough pieces.
- Heat oil in a frying pan over medium heat for frying.
- Carefully place the filled doughnuts into the hot oil, frying a few at a time, until golden brown on both sides (about 3-5 minutes per side).
- Once cooked, remove the doughnuts and place them on a paper towel-lined plate to drain excess oil.
- In a shallow bowl, mix the white granulated sugar and cinnamon for the topping.
- While the doughnuts are still warm, coat them in the cinnamon sugar mixture.
- Allow the doughnuts to cool slightly before serving. Enjoy your delicious apple pie doughnuts!
