These brownies are simple to put together but make a big impression with their colorful cream cheese swirls and deep chocolate flavor. Using real dark chocolate and a touch of cocoa gives them a fudgy texture, while the cream cheese adds a creamy contrast in every bite.
Ingredients
For the Brownie Base:
- 150 g unsalted butter
- 225 g dark or semi-sweet chocolate, chopped
- 3 tbsp dark cocoa powder (optional)
- 4 large eggs
- 1½ cups (250 g) granulated sugar
- 150 g all-purpose flour (1¼ cups)
For the Cream Cheese Swirl:
- 225 g cream cheese (1 block, softened)
- 1 large egg
- 1 tsp vanilla extract
- ¼ cup (50 g) granulated sugar
- Food coloring: orange, purple, and green (gel preferred for vibrant color)
Instructions
Prep
- Preheat oven to 350°F (175°C).
- Line an 8×8 or 9×9 inch pan with parchment paper and lightly grease.
Make the Brownie Batter
- In a small saucepan over low heat, melt the butter and chocolate for five minutes. Once melted, stir off the heat until fully melted and smooth. Set aside to cool slightly.
- Add dark cocoa powder to the chocolate mixture and stir in until fully incorporated.
- In a large bowl, whisk the eggs and sugar on high speed for 3–5 minutes, until pale and creamy.
- Gently whisk in the melted chocolate-butter mixture.
- Sift in the flour and fold with a spatula just until combined. Do not overmix.
- Reserve ¼ cup of brownie batter for swirling. Pour the rest into the prepared pan and smooth the top.
Make the Cream Cheese Mixture
- In a medium bowl, mix softened cream cheese, vanilla, 1 egg and sugar until smooth and creamy.
- Divide the mixture evenly into three bowls.
- Tint each with a few drops of food coloring: one orange, one purple, and one green. Mix well to distribute the color evenly.
Assemble
- Dollop spoonfuls of the three colored cream cheese mixtures over the brownie batter.
- Add small spoonfuls of the reserved brownie batter in between.
- Use a skewer or knife to gently swirl the colors and brownie batter to create a marbled effect. Don’t overdo it — you want distinct colors and movement.
- Add Halloween sprinkles or eye drops if using.
Bake
- Bake for 25 minutes, or until the center is just set and a toothpick inserted comes out with a few moist crumbs.
- Let cool completely in the pan on a wire rack before slicing.

- Use gel or paste food coloring for the most vivid Halloween tones without thinning the cream cheese.
- These brownies are thick and fudgy — chilling them for 30 minutes before slicing gives the cleanest cuts.
