- ½ cup unsalted butter, softened
- ½ cup white granulated sugar
- ½ cup brown sugar
- 1 egg
- 1 ½ teaspoons vanilla extract
- 1 ½ cups all purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ½ teaspoon salt
- ½ cup chocolate chips
- ½ cup butterscotch chips
- 1 cup biscoff spread
Instructions
- Preheat the oven to 350 degrees Fahrenheit and prepare a baking dish with parchment paper.
- In a mixing bowl, add the softened butter, white and brown sugars. Mix together until combined.
- Then add in the egg and vanilla extract. Mix once more until combined.
- Add in all the dry ingredients at once, including the baking soda, powder, salt and flour. Fold in the dry ingredients into the wet until a thick batter is formed.
- Pour in the chocolate and butterscotch chips, folding into the cookie dough.
- Split the cookie dough in half, pressing the first half into the prepared baking dish.
- Melt the biscoff spread for only 10 seconds and pour on top of the first half of the cookie bar dough. Spread evenly in the pan.
- Then add in the second half of the cookie dough covering as much of the biscoff spread as possible, evenly across the pan.
- Place in the oven for 30 minutes or until the cookie bars have lightly browned.
- Remove from the oven and let cool completely.
- Cut into squares and enjoy!
