There’s something irresistible about a freshly baked loaf cake, especially when almond is the star of the show. This almond glazed loaf cake is everything I love in a simple bake: moist, tender crumb thanks to creamy vanilla yogurt, a fragrant hit of almond extract, and a sweet, glossy glaze that soaks into every bite.

Loaf Batter
- 1 cup vanilla yogurt
- ½ cup oil
- 1 cup white granulated sugar
- 3 eggs
- 2 teaspoons almond extract
- 1 ⅓ cups flour
- 2 teaspoons baking powder
- ½ teaspoon salt
Almond Glaze
- 1 cup powdered sugar
- ¼ teaspoon almond extract
- 2-3 tablespoons milk

- Sliced Almonds
Instructions
- Preheat the oven to 350 degrees fahrenheit.
- In a large bowl add the yogurt, oil, sugar, eggs and almond extract. Whisk that together until completely combined and smooth.
- Then add the salt, baking powder and flour into the bowl and mix everything again until just incorporated. Make sure not to overmix.
- Now pour this batter into a loaf pan with parchment paper.
- Bake in the oven for 35-40 minutes or until a toothpick is stuck in and comes out clean.
- While the cake is baking, make the almond glaze.
- In a bowl add the powdered sugar, almond extract and milk. Whisk together until a thick glaze is formed. Start with 2 tablespoons and add more as needed to thin out the glaze to the right consistency, similar to glue.
- Once the cake is out of the oven let it cool completely.
- Remove from the loaf pan and pour the glaze over the top of the cake, letting it fall over the sides. Then sprinkle sliced almonds all over the loaf.
- Cut and enjoy!
