Description

There’s something irresistible about a freshly baked loaf cake, especially when almond is the star of the show. This almond glazed loaf cake is everything I love in a simple bake: moist, tender crumb thanks to creamy vanilla yogurt, a fragrant hit of almond extract, and a sweet, glossy glaze that soaks into every bite.

Loaf Batter

  • 1 cup vanilla yogurt
  • ½ cup oil
  • 1 cup white granulated sugar
  • 3 eggs
  • 2 teaspoons almond extract
  • 1 ⅓ cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Almond Glaze

  • 1 cup powdered sugar
  • ¼ teaspoon almond extract
  • 2-3 tablespoons milk

Toppings

  • Sliced Almonds


Instructions

  1. Preheat the oven to 350 degrees fahrenheit.
  2. In a large bowl add the yogurt, oil, sugar, eggs and almond extract. Whisk that together until completely combined and smooth.
  3. Then add the salt, baking powder and flour into the bowl and mix everything again until just incorporated. Make sure not to overmix.
  4. Now pour this batter into a loaf pan with parchment paper.
  5. Bake in the oven for 35-40 minutes or until a toothpick is stuck in and comes out clean.
  6. While the cake is baking, make the almond glaze.
  7. In a bowl add the powdered sugar, almond extract and milk. Whisk together until a thick glaze is formed. Start with 2 tablespoons and add more as needed to thin out the glaze to the right consistency, similar to glue.
  8. Once the cake is out of the oven let it cool completely.
  9. Remove from the loaf pan and pour the glaze over the top of the cake, letting it fall over the sides. Then sprinkle sliced almonds all over the loaf.
  10. Cut and enjoy!
